Crumbed Gold Spot Cod with Chipotle Mayo Recipe
INGREDIENTS for Crumbed Gold Spot Cod Recipe
1 kg Gold Spot Cod Fillets cut into palm size fillets
Packet Panko Crumbs
Half a cup of Milk
Plain flour seasoned with salt and pepper
METHOD for Crumbed Gold Spot Cod Recipe
Whisk the eggs with the milk, and put into a dish. Put the Panko Crumbs into another dish and the seasoned flour into a third dish.
Roll the fillets in the seasoned flour then dust off excess. Drop the floured fillet into the egg and milk mixture then transfer fillet to Panko crumbs. Press crumbs on well. Put Crumbed Gold Spot Cod fillets into fridge while you prepare the Chipotle Mayo.
INGREDIENTS for Chipotle Mayo
Juice and Zest of one Lemon
One Clove Garlic
1 Cup Kewpie or whole egg Mayo
Chipotle Hot Sauce to your taste (about 2 tablespoons to start)
METHOD for Chipotle Mayo
Using a stick blender, blend all ingredients together. If you don’t have a stick blender then finely chop the fresh garlic and mix all the ingredients together. Taste and adjust for heat. I like to add an extra splash of the hot Chipotle sauce into the mayo just before serving.
Put Chipotle mayo into a ramekin and put in the refrigerator.
Cook the Crumbed Gold Spot Cod fillets in a deep fryer. The fillets are cooked when they float on the surface of the oil.
Drain the Crumbed Gold Spot Cod fillets on paper towel then serve with a nice fresh salad, lemon wedges and the Chipotle Mayo.
